Recipe, anyone? Someone asked me what my favorite Thanksgiving food is, and I realized it's what I'm bringing. I love all the Thanksgiving food, but it wouldn't be complete without Baked Pineapple as a side dish. I got this recipe from a client at least 15 years ago, and have been making it ever since.
Baked Pineapple
1-20 oz. can pineapple chunks in heavy syrup
2 T. flour
½ cup sugar
½ t cinnamon
3 eggs
6 slices white bread, cubed
1 stick butter, melted
Drain pineapple, reserving syrup. Put pineapple in buttered casserole. With electric mixer blend next four ingredients (including syrup). Pour over pineapple. Toss bread cubes in melted butter. Put bread cubes on top of pineapple mixture. (I pat the bread cubes down into the liquid a little bit.) Bake at 350* for about 30 minutes. Double recipe bakes for about 45 minutes. Cook till golden brown and bubbly.

This dish can be served hot or at room temperature. I usually serve it just warm. I always double the recipe. Leftovers are dangerous...you'll be sneaking into your refrigerator and eating it right out of the container. If you hide it, it will still be found. It's just as good cold. Yum.
I woke to the sound of the pouring rain and my neighbor's chimes. I'm sure I get more pleasure out of them than she does just because of their location. I was amazed that she'd pay a few hundred dollars for them, but I'm so glad she did! I thank her every time it's windy. From my bedroom I also hear the chimes that are on my deck. I'm serenaded.
I'll be spending the next 6 or so hours at home, then picking my mom up from the airport. I plan to get a lot done around here, and I'm ready to start now. I'll leave you with an ornament I made last year. I'm the middle sister.

Baked pineapple is a new idea for me. I make pineapple upside down cake sometimes because the little ones love "circle fruit cake." I copied your recipe and it's now on my Thanksgiving menu. (I'd been looking for a new dish just to change things up a little.) Thanks for sharing.
Cheryl, you are so inventive. I love the Christmas ornament. Did you back two pictures or perhaps have another type of backing?
Mary...I backed the ornament with Christmas wrapping paper. I usually use store ads, old cards, etc. for backing. I've got a stack of prototypes piling up from the cards I'm trying to make that I'll use for glittered ornaments. If I find the time. That might be next year's ornaments.

I am definitely putting that recipe on my menu. I'd like to add something to spice up standard menu and this ought to do the trick. I'll have to send the leftovers home with my mother. She doesn't get a lot of food treats.
You can never go wrong with a pineapple dish. I love pineapples! My mother used to make a pineapple upside down cake and a former coworker would bring pineapple gooey to our holiday potlucks at work. Good stuff!
