The gang has left for Charleston and the house is quiet.I was asked about these wonderful recipes, and thought I'd post them.

French Toast Casserole

1 lb French bread, cut diagonally into 1" slices
8 eggs
2 c milk
1 1/2 c half & half
2 t vanilla
1 t cinnamon

topping:
3/4 c butter
1 1/3 c packed brown sugar
3 T corn sugar

Butter a 9X13 pan. Arrange bread in pan. Beat eggs along with other ingredients (not topping). Pour over bread and refrigerate overnight. Preheat oven to 350*. Combine butter, brown sugar and corn syrup. Cook in pan till bubbly. Pour over casserole. Bake uncovered for 40 minutes.

Tomato Pie

Preheat oven and baking sheet to 350*

1 (9") deep dish pie shell
5 large tomatoes, peeled, sliced and squeezed to get seeds out
1/2 small onion, chopped
3 t dried basil or 1/4 c fresh, chopped (I only use fresh)
salt and pepperr
3/4 c mayonnaise
1 1/4 c grated cheddar cheese

Mix tomatoes, basil, onion, s&p in a bowl. Place in bottom of pie shell. Mix mayo and cheese and spread over mixture. Bake on cookie sheet at 350* for 35 minutes or till golden brown and bubbly.
